A healthy gluten-free soup seems too good to be true, but it is! YEP, and perfect for the fall season. Serve up an amazing boost of flavor and health all in one bowl. What I love best is the pasta as I miss eating those carbs but this pasta is gluten-free and will fill you up. Try it tonight and go to sleep refreshed with all the goodness!


  • 1 tbsp. olive oil
  • 1 medium onion, chopped (1 1/2 cups)
  • 3 sprigs of fresh rosemary
  • 2 cloves garlic, minced
  • 3 Roma tomatoes, seeded and chopped (2 cups)
  • 1 15 oz can chickpeas, rinsed, drained
  • 4 cups low sodium vegetable broth
  • 1/2 cup gluten-free pasta (Jovial Foods Gluten-Free Brown Rice Elbows)
  • 1/2 tsp. black pepper, ground
  • 6 tbsp. grated parmesan cheese (fresh if you can)
  • 2 tbsp. finely chopped basil or cilantro


  1. Heat oil in large soup Dutch oven over medium heat. Add onion, and rosemary sprigs, and saute 5-7 minutes or until onion has softened.
  2. Add garlic, and saute 30 seconds. Add tomatoes, and season with salt. Saute 3-5 minutes Remove rosemary sprigs.
  3. Add chickpeas, and slightly mash with fork or potato masher to thicken soup. Add broth, and bring to a boil. add pasta and cook 1 minute less than package directions suggest.
  4. Season soup with salt, if desired and pepper. Garnish each serving with parmesan and basil.

OOO yum…Keep in refrig if any is left over for only 3-5 days. Freshness must be eaten!
