I am excited to share this recipe because going into the winter season I always enjoy a good ol’ cup of hot cocoa…so why not start early in the morning adding a little breakfast bliss!

Our kids love pancakes or as my dad called them, Flapjacks, and especially when you can add whipped cream and chocolate, well too die for breakfast to get them rollin’ for the day is for sure.

With the church being at home this year, our Sunday mornings via video eating breakfast together has been a delight and this recipe has become a favorite!

Ingredients

  • 1/2 c Cacao Powder
  • 2/3 c Organic Sugar
  • 3 c Sifted Flour
  • 1 tbsp. +1 tsp. baking soda
  • 1 tbsp. Cream of Tarter
  • 1/2 tsp. Salt
  • 3 Eggs
  • 3 c Buttermilk
  • 4 tbsp. Salted Butter, Melted
  • 1 c Semi-Sweet Chocolate Chips
  • 1 c Heavy Cream
  • 5 oz Semi-Sweet Chocolate, Chopped
Sift together makes for a CAKE like pancake

Directions

  1. Whisk the cacao powder and sugar in a large bowl to break up clumps. Whisk in and sift together, flour, baking soda, cream of tartar, and salt.
  2. In a separate bowl, whisk the eggs, buttermilk, and melted butter. Gradually fold the wet ingredients into the dry ingredients until just combined. Fold in the chocolate chips.
  3. Heat a large skillet over low to medium-low heat and smear on some butter covering the entire pan. Add 1/3 scoops ( I use an ice cream scooper) to the pan and cook until small bubbles form on the surface and the edges are dry. FLIP and cook the other side until golden brown on the bottom. Repeat until your batter is done.
  4. For the best part…the sauce…Heat the heavy cream in a small saucepan until hot but not boiling. Remove from the heat and add the chopped chocolate, stirring until melted and smooth. Top the pancakes with the chocolate sauce and marshmallows and sprinkles too!

Our favorite homemade ranch style pancakes with a touch of lemon flavor are just enough to start your day with a boost!

One thing, if you use the lemon essential oil which I HIGHLY recommend, use only 1-2 drops. You can also add some real lemon zest too, but this is a wonderful way to add essential oils to your culinary cooking! Also, make sure you PUT THE ESSENTIAL OIL WITH YOUR MELTED BUTTER. This allows the oil to mix well as oil with oil gives the best overall flavor and won’t ruin the good properties of the essential oil.

 

 

 

 

Lastly is the Elderberry syrup which I have here on my blog.  Pour over your pancakes and enjoy the goodness.

Ingredients:

2 whole lemons or 2 drops of Lemon Essential oils

2 1/4 cup of Almond milk

1 cup of Almond milk creamer

2 tbsp Vanilla

3 cups flour

¼ cup of sugar

1 tbsp baking soda
1 tbsp cream of tarter

¼ tsp salt

2 whole eggs, beaten

¼ cup butter, melted

Directions:

Zest both lemons. Set aside. If you’re using the essential oil, mix your 2 drops with the melted butter. Measure the milk and add the juice of one lemon or your essential oil and butter. Stir and let sit for 5 or so minutes and then stir in the vanilla.

Stir together the flour, sugar, baking powder, and salt… Pour in the lemons mixture, stirring gently. When its half mixed, stir in the eggs.  If your batter is too thick add a little more milk.

Heat your iron skillet over medium heat. Next, add butter to grease your skillet, drop in a ¼ cup of batter and pour onto skillet. Cook the first side until you see bubbles and flip and cook until golden brown.

TIPS:

Adding blueberries or mashed bananas make this a whole new level of busting flavor! Just sayin’!
